Boyfriend proof salad
It struck me that I cook a lot, I absolutely love cooking, I post a lot of instagram pics of my creations, but sharing recipes so you can actually make these dishes I do too little!
So from now I plan to post more recipes on my blog…Hooray! I hope you like it!
I personally la-la-looooove salads! I can eat them all day long. Sometimes I feel like Bugs Bunny, eating veggies all the time. Whenever, I tell my boyfriend that I am going to make a salad for dinner his immediate reaction is: ‘With meat please’! He is always afraid that he is not getting his daily dosage of meat. That’s why I want to share my ‘Boyfriend proof salad’ with you. For all the girls with meat loving boyfriends :D
Ingredients for 2 (1 female and 1 very hungry boyfriend ;))
Salad:

Spinach 150 gram

Mixed Lettuce 100 gram

1 green bell pepper
-
1 red bell pepper
-
½ mango
-
80 gram feta cheese
-
½ Onion
-
1 eggplant
-
2 big beef steaks
dressing:
-
1 table spoon yoghurt
-
tea spoon low fat mayonnaise1
-
1 tea spoon hot sauce (sambal)
-
½ tea spoon oregano
-
1 tea spoon bell pepper herb
Instructions:
1. Put your oven on 180 degress Celcius
2. Cut the eggplant in small slices, put them on baking paper on a furnace
grate. Sprinkle some coconut oil, salt and pepper over the eggplant and
put it in the oven for 15-20 minutes.
3. Wash the lettuce and let it dry
4. Cut the mango, bell peppers, onion and feta in small pieces
5. Put all salad ingredients in a small bowl and stir.
6. Fry the steak in a frying pan with some coconut oil. Fry each side for
approximately 1 minute.
7. Add all salad ingreadients to the salad.
8. Cut the steak in small pieces and add it to the salad.
Tip:
Add some French bread with green pesto as a side dish.
